Food
The outfitter will be planning, shopping, and packing the food for the entire trip on the river. We will do our own food before and after. Details of that portion of the food remain to be worked out.
Gabe and Amy are the menu planners/food coordinators. If you have special preferences in food, you can communicate these issues with them. The outfitter will be working with us to put together a menu plan that is customized to our particular needs. We would like to ensure that every meal will have food that can be enjoyed and shared by everyone.
There may be some items that the outfitter can't provide (specific snack bars, dried good, etc.). Gabe/Amy will coordinate this and delegate to people to purchase things if necessary. If you want any snacks/bars/food, you need to communicate with Gabe/Amy so they can plan accordingly.
There are a couple birthdays we'll celebrate on the trip, so it may be fun to do some special food/drink on those nights (April 11/12).
Alcohol
In our effort to keep raft weight low, we would like to minimize alcohol weight. If you choose to bring alcohol as part of you 50lbs, it needs to be shared.

After looking at some postings and discussing this, looks like wine and cocktails. May have a special beer night, but no beer other than that. For box wine 4 liters is 16 glasses, so we figured 1 box per night we have wine gives a fat glass per person. Gabe/Amy will think about drinks with dinner.
One thought - the volume of 21 boxes of wine/alcohol seems a bit excessive. Is it reasonable to have a day off alcohol every few days (i.e 14 days of alcohol or less)? Do people need alcohol every day? Any thoughts?

Re alcohol... I have found that some good whisky, single malt scotch, or bourbon works well packed in plastic water bottles. Another thing to bring would be wine in a box/bag.
Re alcohol quantity . . . we have 16 ft rafts and need to think about weight/volume. That said I think we should stick with the type Nick suggests (box wine or repackaged hard alcohol). I also like the idea of having 2 shared drinks that are passed around, for the whole group i.e. like the Baja crew 1 large margarita for the group (with our numbers it would be 2). This makes it something special group shares and would help with quantity planning.
i second and third laurel and nick comments and support the margarita and/or box wine. costco has some pretty good boxed wine in a 5 bottle box that is about $20. it is easy to pack too.

I also go with the boxed wine and margaritas suggestions. Beer has a very poor volume/utility ratio so I (somewhat reluctantly ;) suggest we forgo this (except for special occasions - can we say bdays ;). Hard alcohol can also be a useful bargaining chip as we remember from the Salmon...
Just talked to Tom while running the Kalama last wknd, his most memorable lunch was one large smoked salmon with cream cheese and crackers - easy, light, lots of calories, tasty.
The food coordinators are proposing four nights of wine and two nights of margaritas to go with the menu. If people want more or less please let us know. Also, feel free to bring your beverage of choice to share anytime. We think wine daily or nearly daily is too much liquid to pack and carry, a happy medium above...?
I have no problems with a majority of alcohol free evenings. I (no longer ;) need the booze to enjoy myself with good friends in an awesome location...
